Sounds yummy. I keep these gluten free pancakes in the freezer and the other morning my granddaughter said she's like pancakes for breakfast so I nuked some up. Now I think they are delicious because they are kinda/sorta a pancake but she took one bite and said "Grandma, I don't want to hurt your feelings but these are kind of disgusting!" Gee whiz. A critic at 7! My husband took a bite and said "I agree with you Julia!" and I ate the plate of them and thought they were delicious! I suspect your recipe would be about 12,000,000 times better, though.

This is interesting...something I've never tried. I'm sure it would be good, I rarely make pancakes. I should try it.
