I wonder if it would be a good idea to whip the egg whites and fold them in separately? Sometimes banana cake is dense and that would help lighten it. My chickens are cranking out 3 eggs a day, so I should get to baking!
I've always used Rose Levy Beranbaum recipe for banana cake but this one looks simpler so I'll be trying it. Thanks for sharing it with me. Warm regards, Simone
