My 18-year-old granddaughter loves corned beef hash, so I'll have to share this with her.
When I was growing up my mom would serve corned beef hash over rice for dinner. She could really stretch the family budget with recipes like this. I know one can fed the five of us.

Oh, this sounds wonderful. I love corned beef hash with eggs, and bet this would be very good too!

I love corned beef also, this way sounds good. I am still cooking out of my freezer and pantry but this is going in my 'must try' pile.
