  3. I love head cheese! But isn't real "head cheese" made with pig or calf's head? I made something like this recently with pigs feet and pigs tongue. It had vinegar and cajun spices - in cajun country they call it "souse". People are grossed out by the idea, but it is low fat, nutritious and utilises the odds and ends. I look forward to recipes for scrapple and blood sausage.

  5. I love head cheese and I'd like to try this recipe. If I can get the various shanks which here seems not so easy to do. I will have to ask the proper butcher.

  6. I love pickled pigs feet too! When I was a kid my mother would marinate pickled pigs feet with olive oil, garlic,roseemary and parsley. We may have been the only kids in town who liked pigs feet.
