If you are like me and do not like the flavor of cooked green peppers, the big red bell peppers are really nice. If you don't mind a messier end product and you like a bit of heat, pasilla peppers are nice. My father, who was a chef, just blanched the peppers before stuffing and baked them, topping with a slice of cheese the last few minutes of baking. Maybe a minute under the broiler would be nice to roast the cheese.
