My mom used to make this with chicken when I was a kid...she served it over those crunchy noodles in a can. That was before we knew what Chinese food was supposed to taste like!
The long simmer doesn't work for me. Veggies too soft. Now, if tough meat was simmered before and added to veggies toward the end so they would still have texture, it's a comfy dish.
