I've never made the dressing with an egg, although hard boiled eggs make a great addtional to the salad - a one dish meal. Once I made this with cooked beets and fresh beet tops instead of spinach. Yum. If you've ever had a garden you know how bountiful the beet harvest can be!

ReplyDeleteI love spinach salads. I agree the egg is an unusual ingredient, but I would guess this would be very good.
