I never like cooked carrots. I eat carrots all the time, but only raw. Here's my fave carrot recipe, Russian Carrot salad: Grated carrots, mayonaise, minced garlic to taste, salt & pepper. Mix well, refrigerate several hours or overnight, stirring occasionally. Enjoy. The garlic fades somewhat, you'd be surprised how much garlic you can put in this. I tried it once with sour cream and olive oil instead of mayo - pretty good!
