Spanish Delight!

  1. Yum. My mother used to make a dish she called Shipboard Glop somewhat like this. (Because on board ship, they'd mix all the leftovers into a big casserole.)
    The base was cornmeal , a middle layer of ground beef, onions, olives, corn, chilis and chile powder, tomatoes and what ever is left over. Top with another layer of cornmeal and some cheese. Bake, eat, be comforted. I suppose now a days, we'd say "Polenta" instead of cornmeal and give it a fancier name. It's a delicious way to use things up.

  2. My husband would love this. His mother always made casseroles like this one.
