Yum. My mother used to make a dish she called Shipboard Glop somewhat like this. (Because on board ship, they'd mix all the leftovers into a big casserole.) The base was cornmeal , a middle layer of ground beef, onions, olives, corn, chilis and chile powder, tomatoes and what ever is left over. Top with another layer of cornmeal and some cheese. Bake, eat, be comforted. I suppose now a days, we'd say "Polenta" instead of cornmeal and give it a fancier name. It's a delicious way to use things up.
As a lover of all things vintage, I write about our cottage home, inspirational decorating, vintage finds, thrifty buys, and old-time recipes. I have many additional interests such as reading, writing, blogging, arts and crafts, and quilting...I write about these interests as well as about family, friends, shelties, nature and hobbies.
This, would be wonderful!

My husband would love this. His mother always made casseroles like this one.
