hmmm.. this looks like an easy way to learn how to make sausage and I do have a meat grinder... and the new mexican grocery in town sells every part of the pig but the oink.
I grew up on this stuff, coming from Czech stock.My dad made many homemade sausages, using casings. He made a smoker out of an old refrigerator.
